(ALMOST READY) Shrimp Bowls with Coconut Cilantro Lime Rice & Pineapple Salsa (Forgot the Salsa)

Homemade shrimp bowls with coconut cilantro lime rice and pineapple salsa



The other night I decided to try the Shrimp Bowls with Coconut Cilantro Lime Rice & Pineapple Salsa recipe from Two Peas & Their Pod and let me just say… it was SO good. Like “immediately adding this into the dinner rotation” good you're having a tropical vacation in a bowl.


However.


Before I became a graceful culinary queen, I first had to survive… the math portion of the recipe 😌


Somewhere between ounces, pounds, cups, and conversions, my brain fully left the chat. So naturally, I had to call my mom because I was confused by some of the recipe notes and her notes, and let me tell you, trying to convert measurements was turning into an accidental algebra class. If recipes start sounding like a standardized math test, I’m already calling my mom.


A few things I learned while making this recipe:

  • The recipe says 4 cups of jasmine rice, but honestly? 3 cups was MORE than enough and still made a ton. You could probably even get away with 2 cups unless you’re feeding an army.

  • You absolutely do not need 6 tablespoons of coconut oil unless you want your pan entering a slip-and-slide competition. I used 3 tablespoons and it worked perfectly.

  • I used 1 lb of raw shrimp and still got a couple meals out of it, but if you’re feeding multiple people, definitely go for 2–3 lbs.


For the shrimp seasoning, I mixed together:

  • 4 tsp garlic powder

  • 4 tsp chili powder

  • 2 tsp smoked paprika

  • 1 tsp dried oregano


Then tossed it all together in a bag like a feeling proud to finally start the shrimp as the rice cooked.

This is where I made my fatal mistake. I reached end of page and though end of the page and I genuinely thought I was done after the rice and shrimp. I was standing there proud of myself, thinking I had absolutely crushed dinner… only to realize I still had to make the pineapple salsa.

That I did not buy ingredients for 😭🍍


Which meant I had to make another grocery trip because reading recipes ALL the way through is important--definitely a rice and shine wake-up moment.

Even though I didn’t get to eat everything right away, the recipe was still incredibly good and 100% worth trying. The flavors together are SO fresh and bright, and the coconut cilantro lime rice with the shrimp is honestly chef’s kiss ✨

Also, confession time: I am absolutely one of those people who buys ingredients purely for aesthetic reasons.


Do I regularly eat jalapeños or cilantro? ABSOLUTELY NOT.

Did I buy them because they look cute in food photos? ABSOLUTELY YES


Anyway, all that said, from kitchen confusion to coconut cilantro triumph.safe to say it's ok to go out of your shell and try all the shrimpressive recipes out there! I highly recommend trying this recipe. Just maybe read the entire thing first unlike me. it's a bowl so good it survived my measurement meltdown 🍤🍍💚
